Why is the price per person more when I want to lower the number of servings?

We don't work on a price per person basis, the price is based on many factors which include all our overheads.

For example, if you had wanted to reduce to say 20 servings, the price would still be very similar to 100 servings as the food is just a part of our operating costs.
